MIDWEST CREAMY CORN & POTATO
CHOWDER
 
1/4 c. butter
1 onion, chopped
1 c. celery, chopped
1 lg. carrot, shredded
1/2 c. finely crushed potato chips
1/4 c. flour
1 can (13 1/2 oz.) chicken broth OR equal amount of broth made with McKay's
chicken seasoning
1 can (12 oz.) corn, drained
2 c. (1 pt.) Half & Half
Salt & pepper
3 potatoes, sliced & boiled

In a large saucepan, heat butter and saute onion, celery and carrot until soft, about 5 minutes. Stir in chips and flour. Gradually stir in broth, corn and Half & Half. Bring to a boil. Remove from heat and stir in salt and pepper to taste.
