FRIED RICE 
1 to 2 c. chopped onion
3 c. cooked pork, ham or turkey
2 to 4 tbsp. soy sauce
1 to 2 c. drained & cooked peas
3 tbsp. vegetable oil
4 to 6 c. steamed rice
2 to 4 eggs, slightly beaten

Brown onion in oil in a large skillet or Dutch oven. Add meat and heat thoroughly. Add rice; toss until heated throughout. Sprinkle with soy sauce. Pour eggs over the mixture. When eggs begin to coagulate, toss until well mixed. Flatten the top of the mixture and simmer. Place peas on top of the rice mixture. Amount may be varied according to individual tastes. Cover and simmer a few minutes.
