SWEET POTATOES WITH BROWN SUGAR
TOPPING
 
3 to 4 med. sweet potatoes
1/2 tsp. cinnamon
1 tsp. vanilla
1 egg
1/2 c. sugar
1/2 stick butter

TOPPING:

1 c. brown sugar
4 tbsp. cornstarch
1/2 c. chopped pecans
1/4 c. soft butter

Boil potatoes until tender. Drain and mash. To the potatoes, add sugar, butter, eggs, vanilla and cinnamon. Beat until mixture is smooth. Pour into casserole and set aside.

Mix brown sugar, cornstarch and soft butter together. Spread on the top of potatoes. Sprinkle chopped pecans over this. Bake at 350 degrees for 20 minutes or until bubbly.
