CREAMED SPINACH | |
3 c. water 20 oz. fresh spinach, washed and stems removed 2 tsp. butter 2 tbsp. all-purpose flour 1 c. skim milk 2 tbsp. Parmesan cheese 1/8 tsp. white pepper ground nutmeg Bring water to a boil. Add spinach. Reduce heat and simmer, covered, about 5 minutes until spinach is wilted. Drain well and set aside. Melt butter in saucepan. Stir in flour and cook over medium-low heat 1 minute, stirring constantly. Whisk in milk; bring to a boil. Cook, whisking constantly, 1 to 2 minutes until mixture thickens. Stir in cheese and pepper. Stir spinach into sauce, heating thoroughly. Spoon into serving bowl. Sprinkle lightly with nutmeg. Garnish as desired. Makes 4 servings. Dietary Exchanges: 1 vegetable, 1/2 starch and 1/2 fat.
