PORK AND VEGETABLE CASSEROLE | |
2 tbsp. vegetable oil 1 lb. lean pork, cut in sm. cubes 1 lg. onion, chopped 1-2 lbs. cabbage, shredded 3 medium potatoes, cubed 1 1/2 c. beef bouillon 1/2 tsp. salt 1/8 tsp. pepper Heat oil in Dutch oven, cast iron if you have one. Add meat; brown on all sides. Add onion; saute lightly. Add bouillon; simmer until meat is almost done. Add potatoes; season with salt and pepper. Cover and simmer until potatoes are just about done. Add cabbage and simmer until cabbage is tender- crisp. Add more seasoning, if necessary. Garnish with chopped parsley, if desired. (I use dry parsley sprinkled on top.) Sprinkle with Parmesan cheese. If i'm taking this dish any where, I put it in a casserole pan and heat it in the oven until hot and bubbly at 350 degrees. |
