CHICKEN FRICASSEE WITH DUMPLINGS 
6-8 chicken pieces
2 tbsp. oil
Salt, pepper
1 c. sliced carrots
1/2 c. sliced celery
1/4 c. chopped onion
1 c. chicken broth
1/2 c. milk
2 tbsp. flour

In large skillet, brown chicken lightly in oil then drain fat; sprinkle with salt and pepper. Add vegetables, broth, 1/4 teaspoon salt; cover and simmer 15 minutes. Blend flour and milk and stir into skillet mixture until slightly thickened.

Spoon dumplings over top. Continue to simmer 10 minutes uncovered, then for 10 minutes covered.

Dumplings: Sift together one cup sifted all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt into mixing bowl. In measuring cup add 3 tablespoons oil to 1/2 cup milk; stir all at once into flour mixture until well but lightly blended.

NOTE: Dumpling recipe on Bisquick box is also ideal for this.
