CRANBERRY COOKIES 
1/3 c. vegetable oil
1/3 c. milk
1 1/2 c. light brown sugar
1 tsp. vanilla
3 c. unbleached flour
2 eggs, beaten
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/3 c. wheat germ (raw)
3 tbsp. orange peel, grated
1 c. dates
1/2 c. nuts
2 1/2 c. fresh cranberries, chopped in sm. pieces

Add 1/2 cup white vinegar to the cranberries and let stand for 1/2 hour, then cream oil, sugar, and vanilla together. Add milk and eggs; mix well. Add wheat germ. Mix flour, baking power, baking soda, salt, orange peel, and rest of fruit. Mix well. Grease cookie sheet and add 1 tablespoon for each cookie. Bake at 375 degrees for 15-18 minutes or until light brown. Makes 4 dozen.
