STUFFED VEAL 
2 lbs. boneless veal breast
1 tbsp. cooking oil
4 oz. chopped chicken livers
1/4 c. chopped onion
1/2 tsp. salt
Dash of pepper
1/2 pkg. (6 oz.) frozen spinach souffle, thawed
4 slices bacon

Pound veal until 1/4 inch thick. Microwave browning dish on HIGH (100%) for 4 minutes. Add oil, livers and onion. Microwave on HIGH (100%) for 3-4 minutes or until tender. Stir halfway through cooking. Sprinkle salt and pepper on veal.

Spread spinach souffle over half of the veal. Spoon chicken livers and onion over spinach. Fold other half of veal over stuffing. Tie together with string. Place on a rack in a baking dish. Top with bacon slices. Cover; microwave on MEDIUM-HIGH (70%) for 30-35 minutes or until tender. Turn roast over halfway through cooking time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
