BUTTERMILK DONUTS
2 tbsp. shortening
3/4 c. sugar
2 eggs
4 c. sifted flour
2 tsp. baking powder
1/2 tsp. each cinnamon, mace and nutmeg
1/2 tsp. each salt and baking soda
1 c. buttermilk

Cream shortening and sugar until light. Add eggs one at a time, beating well after each addition. Sift dry ingredients and add alternately with buttermilk to first mixture, beating after each addition. Mix well and chill for at least 1 hour (overnight better). Turn out on lightly floured board and roll out to 1/2 inch thickness. Cut with floured cutter. Fry in hot deep fat (370 degrees) until golden brown on both sides, turning once. Drain on absorbent paper. Makes about 2 1/2 dozen.
