MANDARIN ORANGE SALAD 
1/4 head iceberg lettuce
1/4 head romaine lettuce
1 c. chopped celery
2 green onions with tops, thinly sliced
11 oz. can mandarin oranges, drained

Tear lettuce into bite-sized pieces - put in plastic bag. Add celery and onion. This can be stored up to 24 hours. Just before serving, add oranges, dressing and some of the almonds. Shake. Use remaining almonds on top. Serves 4-6.

DRESSING:

1/2 tsp. salt
Dash pepper
2 tbsp. sugar
2 tbsp. vinegar
1/4 c. cooking oil
Dash red pepper sauce
1 tbsp. snipped parsley

Shake, cover and refrigerate.

ALMONDS:

1/4 c. sliced almonds
1 tbsp. + 1 tsp. sugar

Cook over low heat, stirring constantly until sugar melts and almonds are coated. Break apart and store at room temperature.
