CHEESE MEAT BALLS 
1 lb. ground lean chuck or round steak
1/2 c. fresh bread crumbs
1/3 c. crumbled Roquefort cheese
2 tbsp. finely chopped onion
3/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 egg
3 tbsp. milk
Butter

Combine all ingredients except the butter. Shape into balls about 3/4 inch in diameter. Brown the balls on all sides in hot butter. Serve hot on toothpicks.
