TRUFFLES 
6 oz. dark sweet chocolate
3 tbsp. butter
2 tbsp. powdered sugar
3 egg yolks
1 tbsp. rum or brandy flavor

Melt chocolate over hot water, beat in butter and sugar, stir until dissolved remove from heat and beat in egg yolks one at a time stir in flavor. Put in a bowl and cover with warm paper, let set overnight in a cool place (not refrigerated). Shape into 1 inch balls. Roll in grated chocolate or nuts. Store in refrigerator.
