OATMEAL COCONUT COOKIES 
2 c. sifted all purpose flour
1 c. granulated sugar
1 c. brown sugar, packed
1 c. shortening, butter flavored Crisco
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 tsp. vanilla
1 1/2 c. quick cooking rolled oats
1 c. chopped pecans
1 c. flaked coconut

Sift together flour, granulated sugar, baking powder, soda and salt. Add brown sugar, shortening, eggs, vanilla and beat well. Stir in oats, pecans and coconut. Roll dough in small balls and dip top in granulated sugar. Place on ungreased cookie sheet and bake at 350 degrees for 12 to 14 minutes. Makes approximately 8 1/2 to 9 dozen cookies.
