PHYLLO ROLL-UPS 
1 box phyllo dough
1/2 c. clarified butter
1 lb. muenster cheese, grated
1 lb. Ricotta cheese
2 eggs, beaten
2 lbs. Italian sausage, browned
1/4 c. chives or parsley

1. Cut phyllo dough lengthwise into 4 strips. Cover strips with damp towel.

2. Mix cheese, eggs, sausage and chives.

3. Brush one strip of dough with butter. Place 1 to 2 tablespoons of cheese mixture at end of strip. Fold flagstyle. Repeat with remaining strips.

4. Can be frozen at this point.

5. Bake at 375 degrees for 15 to 20 minutes.
