APPLE WALNUT SUPREME CAKE 
4 c. coarsely peeled & chopped apples
1 3/4 c. sugar
2 eggs
1/2 c. Crisco oil
2 tsp. vanilla
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 c. chopped walnuts

Combine apples and sugar and set aside. In a large bowl, mix eggs, oil, vanilla, and beat for 1 minute at medium speed. Add dry ingredients alternately with apple mixture. Stir in walnuts. Bake in preheated 350 degree oven in 13"x9"x2" pan for 45 to 50 minutes or until cake tests done with a toothpick.

GLAZE:

1 c. confectioners' sugar
2 tbsp. lemon juice
1/2 tsp. vanilla
1 tbsp. light corn syrup

Blend until smooth. Pour over cooled cake.
