SHEPHERD'S PIE 
1 lb. ground beef
1 onion, diced
1/2 green pepper, diced
1 celery stalk, diced
1 tbsp. black pepper
1 tsp. salt
1 tsp. paprika
1 (12 oz.) can whole kernel corn, drained
4 lg. potatoes, peeled, cooked, and mashed
1 (8 oz.) pkg. process American cheese, sliced
1/2 c. Parmesan cheese (optional)
1/2 c. parsley (optional)

Preheat oven to 350 degrees. In a large skillet, brown beef. Add onion, green pepper, celery, black pepper, salt and paprika. Heat through, then drain off excess liquid.

In a large oven-proof baking dish, layer bottom with beef mixture. Then layer the corn, potatoes, then the American cheese, spreading each layer to touch the sides of the dish. Bake for 20 minutes until heated through and the cheese has melted. Sprinkle with Parmesan cheese and parsley, if desired.
