SHRIMP SALAD IN AVOCADOS 
2 avocados
Lemon juice
1 lb. bay shrimp
1/3 c. mayonnaise
2 tbsp. cocktail sauce
2 tbsp. green onions
2 tbsp. minced celery
Lemon wedges

Cut avocados in half. Remove pit. Gently remove avocado from skin. Do not cut or break avocado. Slice a thin slice from uncut side of each half so they will sit on plate without rocking. Rub with lemon juice.

Gently toss shrimp, mayonnaise, cocktail sauce, onions and celery. Spoon on avocado halves. Garnish with lemon wedges. Serves 4.
