SOUTHERN STEAK SAUCE | |
1/4 c. butter, softened 2 tbsp. dry mustard 2 3/4 tsp. salt 2 3/4 tsp. sugar 3/4 tsp. paprika 1/4 tsp. pepper 2 lb. sirloin steak (1-in. thick) 1/4 c. olive oil 2 tbsp. worcestershire sauce 2 tbsp. catsup Combine the butter, dry mustard, 2 teaspoons salt, 2 teaspoons sugar, paprika, and pepper. Spread half on one side of the meat. In a large skillet, brown the meat, butter side down. As the meat browns, spread the remaining butter on top. Turn and brown, remove and place the steak on a broiler pan. Combine the remaining ingredients, add to the skillet drippings and brush on the steak. Broil 5 inches from the heat for 5 to 7 minutes on each side, brushing it frequently with the sauce. |
