POTATO BROCCOLI SOUP 
1 1/2 c. broccoli, in bite size pieces
1/2 c. celery, chopped
1/2 c. carrots
1/2 c. onion, chopped
2 tbsp. butter
2 tbsp. flour
2 1/2 c. water
1/2 tsp. salt
1/2 tsp. pepper
5 to 6 med. potatoes, cubed

Put broccoli, celery, onion, potatoes and carrots into large saucepan. Use enough water to cover tops. Boil over medium heat until potatoes are done, stirring occasionally.

While this is boiling, melt butter in a large saucepan. Stir in flour. Keep stirring until mixture is smooth and bubbly. Stir in 2 1/2 cups water. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in potato mixture. Add salt and pepper. Heat and serve. 8 servings.
