CARROT - PINEAPPLE CAKE | |
2 c. all-purpose flour 2 tsp. baking powder 1 1/2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 2 c. sugar 4 eggs 2 c. grated carrots 1 1/2 c. oil 1 sm. can crushed pineapple 3/4 c. raisins 3/4 c. nuts, chopped Sift flour, baking powder, soda, cinnamon and salt. Beat sugar, eggs and oil to mix. Add flour mixture, then remaining ingredients. Bake in a large pan 13 x 9 inches at 350 degrees about 30 minutes. Or in a tube pan 45 minutes or until done when tested with toothpick. CARROT CAKE FROSTING: 1 lb. confectioners sugar 1/2 c. butter, melted 1 (8 oz.) pkg. cream cheese 2 tsp. vanilla Combine above ingredients and spread on a cool cake. |
