BARBECUED BRISKET | |
1 lg. fresh beef brisket SAUCE: 1 c. catsup 1/3 c. Worcestershire sauce 2 c. water 1 tsp. salt 2 dashes Tabasco sauce Bake large fresh brisket of beef, fat side up, uncovered at 300 degrees until brown, approximately 1/2 hour. Then cover with foil and continue baking, checking meat frequently until tender. (Example: a 7 1/2 pound brisket might bake for 3 1/2 hours.) When tender, drain fat, trim off remaining fat and slice thinly, standing slices close together in oblong baking dish. Mix all sauce ingredients and pour over sliced meat. This will be at its best if allowed to stand overnight in the refrigerator and then reheated until bubbly hot, about 1 hour at 350 degrees. This can be served as an entree or on hot rolls, a delicious sandwich. |
