PEACH COBBLER | |
3 c. sliced peaches (apples may be used) 1/4 c. sugar 1 tsp. grated lemon peel 1 tsp. fresh lemon juice 1 tsp. lemon extract Arrange fruit in greased baking dish; combine sugar, lemon peel and juice and sprinkle over fruit. Set in oven to heat while preparing shortening. SHORTENING: 1 1/4 c. flour 1/2 tsp. salt 1 tbsp. sugar 1 egg, well beaten 3 tsp. baking powder 1/3 c. shortening 1/2 c. milk Sift dry ingredients together, cut in shortening until mixture is like coarse crumbs. Add milk and eggs all at once and stir until flour is all moistened. Spread over fruit and bake in 400 degree oven for 35 to 40 minutes. |
