VEGGIE MIX 
1 lg. tomato
1 c. cauliflower florets
1 c. broccoli buds
1 cucumber, sliced
1 zucchini, cut in julienne strips
1 lg. carrot, cut in julienne strips
1 sm. onion, sliced and separated into rings
1/2 c. pitted ripe olives

Dressing:

1/2 c. olive oil
1/3 c. red wine vinegar
1/2 tsp. dried oregano
1/2 tsp. garlic salt
1/4 tsp. pepper

Combine tomato, cauliflower, broccoli, cucumber, zucchini, carrot and onion rings.

To make dressing combine oil, vinegar, oregano, garlic salt and pepper. Cover and shake to mix thoroughly. Pour dressing over the vegetables. Cover and chill 2-3 hours, mixing occasionally. Add drained, ripe olives and serve.

8-10 servings.
