CHOCOLATE ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
1 tbsp. vanilla
2 c. grated zucchini
3 c. flour
1 tbsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
2 squares melted chocolate (or 6 tbsp. cocoa and 2 tbsp. oil)
1 c. chopped nuts

Preheat oven to 350 degrees. Grease two 9x5 inch loaf pans. Beat eggs until frothy. Add sugar and oil; beat until thick. Stir in vanilla and grated zucchini. Sift flour, salt, cinnamon, baking soda and baking powder together. Add to egg mixture. Blend well. Add melted chocolate and nuts. Stir. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Makes 2 loaves.
