PUMPKIN APPLE SOUP 
1 tbsp. oil
1 med. onion, finely chopped
3 Granny Smith or tart apples, peeled and sliced
4 c. Libby's complete pumpkin pie mix with seasonings (not plain canned pumpkin)
1/2 tsp. mace
6 c. chicken broth

Cook onion in oil until wilted. Add apples; cover and cook until tender. Stir in pumpkin pie mix, mace and chicken stock. Cook for 10 minutes, stirring to blend.
