TACO SALAD 
2 lbs. ground beef
1 pkg. taco seasoning
1/2 head lettuce, more lettuce can be used
1 lg. tomato
1 med. onion
1 pkg. Cheddar cheese, shredded
Nacho chips
Salsa
Sour cream
Black olives (optional)

Brown the ground beef and drain off the fat. Add the taco seasoning following the directions on the package. While that is simmering cut the vegetables into small salad size pieces. In a large bowl, toss together the meat and the vegetables. Next toss in your own desired amount of cheese and broken chips. Serve with salsa and/or sour cream.

If you want to lower the fat content use lower fat ground beef, low-fat cheese and sour cream substitute. If you want to lower the salt content use low sodium taco seasoning and substitute taco shells (broken) for the nacho chips. One taco shell per person is about right.
