CHEESY CHICKEN & STUFFING 
2 1/2 c. cooked chicken pieces
1/4 c. onion
1/2 c. mayonnaise
3/4 tsp. salt
1 stick butter, melted
8 oz. pkg. croutons, slightly crushed
1 c. water
2 eggs
1 1/2 c. milk
1 can cream of chicken soup
8 oz. shredded mozzarella cheese

Combine butter, croutons and water. Place half of this mixture in casserole dish.

Mix chicken, onion, mayonnaise and salt. Place this, half the cheese and remaining stuffing in casserole. Combine eggs and milk; pour over all. Can refrigerate overnight at this point. Before baking, top with undiluted soup. Bake at 325 degrees for 40 minutes. Add remaining cheese and bake 10 more minutes.
