CRABMEAT CHICKEN 
2 whole chicken breasts, skinned, boned, halved and flattened with excess fat removed
1/2 c. flavored bread crumbs
4 mushroom caps without stems
4 oz. crabmeat, cleaned
Sprig of chopped, fresh dill or 1/2 tsp. dried dill
4 slices Monterey Jack cheese
2 tsp. butter
2 tsp. olive oil

Lay breaded chicken in oiled casserole dish. On each chicken breast, add crabmeat and mushroom cap. Dot with butter and top with Monterey Jack cheese. Bake in a preheated 425 degree oven for 20 minutes. Remove from oven with a spatula. Serve on heated plates.
