ALOHA TURKEY SALAD | |
3 c. cooked Mahatma brown rice 3 c. cooked white meat turkey, coarsely chopped 1 can (8 oz.) pineapple chunks in juice (drain and reserve) 1 can (8 oz.) water chestnuts, drained, sliced 1 med. unpeeled apple, cored and chopped 1/2 c. plain nonfat yogurt 6 lettuce leaves 1/4 c. shredded coconut, toasted Combine Mahatma Brown rice, turkey, pineapple, water chestnuts, and apple. Toss lightly with yogurt and 1 tablespoon pineapple juice. Serve on lettuce leaves and garnish with coconut. Serves 6. Per serving: 288 calories, 5 g. fat (15% of calories), 15.1 g dietary fiber, 25 g. protein, 49 mg. cholesterol. 76 mg sodium. |
