ZUCCHINI CASSEROLE 
6 c. zucchini, chopped or grated
1/4 c. chopped onion
1 can cream of chicken soup
2 tbsp. sour cream
1 c. shredded carrots
1 sm. box Stove Top dressing
1/2 c. melted butter
1/2 c. water

Cook zucchini, onions and carrots; drain well. Combine soup and sour cream, stir in carrots, zucchini, and onions. Mix stuffing with 1/2 cup water and melted butter. Put half of stuffing mix in bottom of pan, then spread vegetable mixer on stuffing, top with remaining stuffing. Bake at 350 degrees for 25 minutes.
