BLACK BEAN 'N VEGETABLE CHILI | |
1 lg. onion 1 tbsp. vegetable oil 1 (28 oz.) can whole tomatoes 2/3 can picante sauce 1 1/2 tsp. ground cumin 1 tsp. salt 1/2 tsp. basil leaves 2 (16 oz.) cans black beans 1 green pepper, cut into 3/4" pieces 1 red bell pepper, cut into 3/4" pieces 1 zucchini, cut into 1/2" chunks (2 c.) In large saucepan, cook onion in oil until tender. Add tomatoes, picante sauce and seasonings. Cover and simmer 5 minutes. Stir in beans, peppers and zucchini. Cover and simmer until vegetables are tender, about 15 minutes. |
