CRACKLIN' COWBOY CORNBREAD 
1 1/2 c. cornmeal
1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. milk
2 eggs, beaten
2 tbsp. vegetable oil
2 c. shredded cheese
8 oz. can creamed corn
1 small onion, chopped
2 c. cracklings

Combine first 4 ingredients. Mix well. Add milk, eggs and vegetable oil. Stir well into remaining ingredients. Pour batter into a greased skillet (cast-iron).

Bake at 350°F for 30 to 35 minutes or until browned.
