CRAWFISH (OR SHRIMP) FETTUCINI | |
2 med. onions, chopped 3 green onions, chopped 1 med. bell pepper, chopped 2 ribs celery, chopped 1 1/2 sticks butter 1 tbsp. flour 1 tsp. parsley 1 1/2 to 2 lbs. crawfish or shrimp 1/4 to 1/2 can jalapeno relish 1/2 lb. Velveeta cheese or Velveeta cheese with peppers can be substituted 1/2 pt. half & half 3 cloves garlic 1/2 lb. fettucini noodles or sm. flat egg noodles Parmesan cheese Saute onion, pepper, celery, green onions in butter until soft. Add flour, parsley, crawfish or shrimp; cook for 15 minutes. Add jalapeno relish, Velveeta cheese, half & half, and garlic; cook 15 minutes. Cook noodles until tender; drain. Rinse in cold water; drain again. Add noodles to sauce and fold in well. Pour into casserole dish; sprinkle with Parmesan cheese. Bake at 350 degrees for 15 minutes. |
