CHOCOLATE MINT MELTAWAYS 
COOKIE:

10 oz. mint morsels
3/4 c. butter, softened
1/2 c. sifted confectioners' sugar
1 egg yolk
1 1/4 c. all-purpose flour

GLAZE:

1/2 c. mint chips
1 1/2 tbsp. vegetable shortening
2 tbsp. toasted almonds, chopped

Preheat oven to 350 degrees. Melt over hot, but not boiling water, 1 cup mint morsels. Stir until smooth. Set aside.

In a large bowl, combine butter, sugar and egg yolk. Beat until creamy. Add morsels and flour. Blend well. Drop by heaping teaspoons onto ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Allow to sit 3 to 5 minutes before glazing.

Combine glaze over hot boiling water, 1/2 cup mint chips and vegetable shortening. Stir until melted and smooth. Drizzle each cookie with 1/2 teaspoon of glaze. Sprinkle with almonds. Chill until set, about 5 to 10 minutes. Store in refrigerator or cool place so glaze doesn't melt.
