SOUTHERN STYLE BANANA PUDDING 
1 (4 servings) pkg. vanilla or banana cream pudding (reg. or instant)
2 c. skim milk or 1% milk
32 vanilla wafers
3 bananas, sliced
3 egg whites, room temperature
1/2 tsp. vanilla
1/8 tsp. cream of tartar
1/2 c. sugar

Prepare pudding according to package directions, substituting skim or low-fat milk for the whole milk.

Arrange half of the vanilla wafers in bottom of 8 x 8 x 2 inch square pan or baking dish. Top with half of the bananas, then half of the pudding. Repeat with layer of remaining wafers, bananas, and pudding.

Beat egg whites, vanilla, and cream of tartar in medium size bowl at high speed until soft peaks form. Add sugar gradually, beating until stiff peaks form. Spread meringue over pudding, spreading to the edge of dish to seal.

Bake in preheated 350 degree oven for 10-15 minutes or until golden brown. Makes 8 servings at $.47 each.
