BRUNCH 
1 lb. Owen's hot sausage
1 bell pepper, chopped
1 or 2 onions, chopped
5 handfuls frozen hash browns
1 lb. cheddar cheese, grated
Picante sauce

Brown sausage. Remove from pan. Drain. In sausage grease, cook bell pepper, onions and hash browns together, until soft. Combine all cooked ingredients in a bowl with 1/2 pound cheddar cheese. Mix together. In baking dish, put mixture in. Top with remaining cheese. Beat 7 or 8 eggs. Pour over top. Pinch with fork. Cook until bubbles and eggs set, about 30 minutes at 350 degrees. Serve with picante sauce on top and biscuits.
