FEATHER SPONGE CAKE 
6 med. or 5 lg. eggs, separated
1 1/2 c. granulated sugar
1 1/2 c. cake flour
1/2 c. cold water
3/4 tsp. cream of tartar
1 tsp. almond extract
1 tsp. lemon extract
1 tsp. vanilla extract
1/3 tsp. salt

Whip egg yolks very light, gradually add water and continue beating. This mixture will be almost as foaming as egg whites. Gradually add sugar, continue beating. Fold in flour which has been sifted 4 times. (Use Wondra, do not have to sift.) Add flavoring. Beat egg whites, when foamy, add salt and tartar. Beat stiff but not dry or until it resembles new fallen snow. Fold it into other mixture. Bake in ungreased large Turk-Head funnel pan in preheated 325 degree oven for 1 hour. Let hang upside down in pan for 3 hours.
