EASY ALMOND CHICKEN 
2 c. diced chicken, cooked
1 (4 oz.) pkg. whole blanched almonds
1 can fancy mixed Chinese vegetables, drained
2 pkg. frozen snow pea pods
1 tbsp. soy sauce
1 pinch ginger
1-2 c. water
1-2 tbsp. cornstarch

Brown almonds and chicken in a very small amount of oil in a large skillet. Add pea pods and stir over moderately high heat (about 1 minute). Add mixed vegetables and stir. Add water, ginger, and soy sauce. Simmer for about 5 minutes (the amount of water depends on the amount of sauce you like). Thicken with cornstarch, mixed in a little cold water. Stir until sauce is evenly thickened. Serve with rice (add a couple tablespoons of soy sauce to the water when cooking rice.)
