ZUCCHINI BREAD 
This is one way of getting vegetables into your children without them knowing it and it tastes good too!

4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. unsifted flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. grated zucchini
1 tsp. vanilla
2 handfuls chocolate chips
1 c. chopped walnuts (optional)

In large mixing bowl, beat eggs and add oil. In a separate bowl combine all dry ingredients.

Add dry mix to eggs and oil alternately with zucchini. Stir in nuts and vanilla. Add chocolate chips. Pour into 2 greased and floured loaf pans. Bake on low rack at 350 degrees for 55 minutes. Makes 2 loaves.

NOTE: You need not peel the zucchini before grating it. Just remove the seeds. Freeze left over grated zucchini in 2 cup packages for next time.
