CHOCOLATE DIPPED MACAROONS | |
2 2/3 c. Baker's coconut 2/3 c. sugar 1/4 c. unbleached flour 4 egg whites 1 tsp. vanilla extract 8 oz. semi-sweet chocolate Preheat oven to 325 degrees. Combine coconut, sugar and flour. Stir in egg whites and vanilla extract. Form rounded ball and place on greased cookie sheets. Bake 20 to 25 minutes until lightly browned. Remove from oven and remove from sheets while hot. Allow them to cool. Can be served with or without chocolate dip. CHOCOLATE DIP: Melt chocolate in double boiler, being careful not to burn chocolate. Remove from heat. Dip one half of the cookie in chocolate. Place on wax paper until chocolate cools. |
