DIET PINEAPPLE BRAN MUFFINS | |
4 c. All Bran (not flakes), soak in 1 can crushed pineapple until soft 4 eggs, well beaten 1/3 c. oil 8 Sucryle Tabs, dissolved in 2 tsp. hot water (or any other sweetener equal to about 8 tsp. sugar) 1 tsp. salt 2 tsp. baking soda, dissolved in 1/2 c. skim milk plus 1 tsp. vinegar 1 tsp. baking powder 2 tsp. vanilla 1 c. all-purpose flour Mix all together; put into medium size paper cups in muffin tins, 7/8 full. Bake 5 minutes at 400 degrees. 9 minutes at 350 degrees. Test with toothpick until it comes out clean; store or freeze. You can add raisins or chopped dates or whatever you like. |
