AUSTIN'S WHEAT FREE MUFFINS 
2 c. Quaker Oat Bran cereal
1/4 c. firmly packed brown sugar
2 tsp. baking powder
1 c. milk
2 eggs
2 tbsp. vegetable oil
1/4 c. honey

Heat oven to 425 degrees. Line 12-18 muffin tins. Combine dry ingredients. Combine milk, honey, eggs, and oil, mixing until just moistened. Fold in any extra ingredients (1/2 cup raisins, blueberries, grated carrots or zucchini, pumpkin; 1/2 cup cheese; 1 medium banana; etc.) Fill muffin tins almost full. Bake 15-17 minutes or until golden brown. Store muffins in freezer. Reheat in microwave on high about 30 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
