SUMMER SQUASH CASSEROLE 
2 summer squash, sliced
1 med. onion, sliced
2 tomatoes, sliced
1 c. croutons
1 c. grated cheddar cheese
1 tsp. salt
Pepper to taste

Place half the squash in 1 1/2 quart casserole. Layer half of each remaining ingredients over squash. Repeat layers. Cover and bake at 350 degrees for 1 hour. Uncover and sprinkle with cheese. Return to oven until cheese melts. Serves 4.
