CARROT CAKE 
2 tsp. cinnamon
2 c. sugar
4 eggs
1 tsp. salt
2 c. grated carrots
2 c. flour
1 1/2 c. Crisco oil
1 heaping tsp. baking soda

Sift flour, salt, soda and cinnamon. Beat eggs lightly and add sugar and oil. Add to flour mixture. Add carrots. Bake at 350 degrees for 50 minutes. Grease but do not flour pans. Top with following icing.

ICING:

8 oz. Philadelphia cream cheese
1 box powdered sugar
1 c. walnuts
1 stick butter
1 tsp. vanilla

Beat together and spread on cake.
