BANANA PUDDING | |
3/4 c. sugar 1/3 c. flour Dash of salt 4 eggs, separated 2 c. milk 1/2 tsp. vanilla Nilla Wafer cookies Bananas In top of double boiler, combine 1/2 cup sugar, 1/3 cup flour and add salt. Stir in 2 cups milk. Stir constantly. After this has mixed well, add a tablespoon of pudding mixture to the egg yolks and stir well; repeat this until you have added 4 or 5 tablespoons of pudding to the egg yolks then add this to the rest of the pudding (this keeps eggs from curdling). Add vanilla. Cook until thickened, stirring continuously; reduce heat, continue cooking and stirring for 3 to 5 minutes longer. Remove from heat and spread pudding to cover bottom of casserole dish. Cover this with cookies, then sliced bananas, repeat pudding, cookies, bananas, ending with pudding. Beat egg whites until stiff gradually adding 1/4 cup sugar and beat until stiff peaks form. Spoon on top of pudding spreading to be sure and seal edges. Bake at 425 degrees for about 5 minutes. |
