BANANA-NUT CAKE 
2 1/2 c. flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. soft shortening
2/3 c. buttermilk
1 1/4 c. mashed very ripe bananas (3)
3 eggs
2/3 c. finely chopped nuts

Heat oven to 350. Grease and flour two layer pans or a 9x13 pan.

Mix flour, sugar, baking powder, soda and salt. Add shortening, buttermilk and mashed bananas. Beat 2 minutes, medium speed with mixer. Add eggs. Beat 2 more minutes. Pour into pan. Bake 30-35 minutes or until cake tests done. Cool. Frost with any favorite white frosting with 1 mashed banana and 1/2 teaspoon lemon juice added.
