SAUCY BEEF STRIPS 
Preparation time: 25 minutes. Cooking time: about 25 minutes. Serves: 4.

1 1/2 lbs. sirloin or round steak.
1/4 c. butter
1 clove garlic, minced or pressed
1/2 c. chopped onion
1 lg. green pepper, cut into strips
1 shredded or grated carrot
1 can (1 lb.) tomatoes with liquid
1 beef bouillon cube
1/2 tsp. dried oregano leaves
1 tbsp. cornstarch
2 tbsp. each water & Worcestershire sauce
1/2 tsp. salt
1/2 c. grated cheddar cheese

1. Wipe meat with damp paper toweling. Cut into 1/4 inch strips. Saute in heated butter with garlic until browned. Remove meat.

2. Add onion, green pepper and carrot. Cook 2 minutes longer. Return meat to skillet. Add tomatoes with liquid, bouillon cube and oregano. Cover and simmer about 15 minutes or until meat is tender.

3. Meanwhile, in small bowl mix together cornstarch, water, Worcestershire sauce and salt. Blend into meat mixture, stirring until thickened.

4. Serve over cooked noodles. Sprinkle with grated cheese. Recipe may be halved or doubled.

Good served with: Green salad and garlic bread.

HEALTH NOTE: To lower sodium, reduce salt and use no-salt-added canned tomatoes, if desired.

TIPS: When purchasing pasta, look for the term "enriched" on label which means B vitamins and iron have been added.
