COCONUT PIE 
1/4 c. sugar
5 tbsp. flour
1/4 tsp. salt
3 egg yolks, slightly beaten
2 c. milk
1 1/2 c. Baker's shredded coconut
1 (9 inch) baked pie shell
6 tbsp. sugar for meringue plus 3 egg whites

Combine 1/4 cup sugar, flour and salt; add milk carefully, stirring until smooth. Cook over rapidly boiling water for 10 minutes, stirring constantly. Mix small amount of the mixture with the egg yolks and return to double boiler and cook 2 minutes.

Remove from heat. Add 1 cup coconut and vanilla to taste. Turn into cooked pie shell. Spread with meringue made from beating the egg whites, adding 6 tablespoons sugar and vanilla to taste. Topping with 1/2 cup coconut. Bake in moderate oven.
