HOLIDAY CORN CASSEROLE 
1 (16 oz.) cream style corn
1 c. crushed saltine crackers
1/3 c. shredded carrots
1/3 c. chopped bell peppers
1/4 c. chopped celery
1/4 c. chopped onion
1/2 tsp. sugar, optional
6 drops bottled liquid hot sauce
2 eggs, beaten
1/3 c. evaporated milk
Shredded cheddar cheese
Paprika

Combine corn, crackers, carrots, bell pepper, celery, onions, sugar, hot sauce, eggs, milk and 1/2 cup shredded cheddar cheese. Pour mixture into lightly greased 1 1/2 quart baking dish. Sprinkle with additional shredded cheese and paprika. Bake 30 minutes at 350 degrees.
