MOLASSES COOKIES 
1 c. brown sugar
2/3 c. vegetable oil
1 egg
1/4 c. molasses
2 c. flour
2 tsp. baking soda
1/2 tsp. salt (optional)
1 tsp. each ginger & cinnamon

Beat together first 4 ingredients. Add the rest of the dry ingredients and stir together until well blended. Drop by teaspoonful on cookie sheet sprayed with Pam. Bake at 350 degrees for 8 to 10 minutes. You may chill dough 2 hours or overnight if desired, before baking.
